By mixing up this simple chicken sausage recipe I incorporate traditional sausage flavor in my meals without ingredients I can’t–and don’t want to– identify. It also brings down the cost of enjoying quality sausage.
I use the meat grinder attachment on on my Kitchen Aid to grind inexpensive chicken breasts from Zaycon, however you can also purchase ground chicken or turkey. To keep the price low, also look for spices sold in bulk at grocery or health food stores.
For each pound of sausage you will need:
1/2 t. salt
1t. fennel seed
1/2 t. red pepper flakes
Stir the seasonings together and mix into the ground meat. (Since I’m pretty lazy I usually let me KitchenAid mixer take care of the heavy work.)
Your chicken sausage is ready to use!
I like to make several pounds at a time, brown it, and freeze it in individual one pound packages so I can quickly throw together meals like the cajun soup pictured above.
